Gluten Free Breakfast Waffles

Why gluten free breakfast waffles?

Waffles are so versatile and you can have them with savoury or sweet toppings:

1. *High in Fiber:* Both chickpea flour and buckwheat flour are high in fibre and are wonderful gluten free alternatives to regular flour. The fibre content supports bacterial diversity within the gut and thus supports overall gastrointestinal health and function.

2. *Gluten free:* Both chickpe and buckwheat are gluten free alternatives to regular wheat flour and so provide an alternative to those with gluten sensitivity or coeliac disease or those wishing to reduce the frequency of their gluten consumption.

3. *High protein:* Chickpea flour contains good amounts of protein which in addition to the eggs in the recipe help boost that morning protein intake essential for prolonged morning energy. A great way to start your day.

4. *Dairy free:* Made with coconut milk, or other nut milk if preferred, these are dairy free making them a great choice for people with dairy reactivities.

5. *Blood Sugar Regulation:* The combination of fats, protein and non-refined carbohydrates in this recipe help to balance blood sugars throughout the morning, preventing spiked and dips in energy. They will leave you replete until lunchtime.

Overall, a great ay to start the day. These waffles are also quick to make, taking less than 5 minutes to combine the ingredients and about 3 minutes to cook in a waffle maker, they are idea for the whole family.

*Ingredients:*

- 130g buckwheat flour

- 130g chickpea flour

- 2 tbsp coconut sugar

- 1 teaspoon ground cinnamon

- 1 tbsp baking powder

- 3 large eggs

- 100g melted butter

- 425ml nut milk

*Instructions:*

1. Combine all dry ingredients

2. Add wet ingredients and mix

3. Pour into waffle maker. Cook for 3.5mins (timings will be dependent on your waffle machine but this seems to get the right colour without burning)

4. Serve topped with nut butter, yoghurt, berries, bee pollen, cacao, or poached eggs and nitrate free bacon or avocado ad a sprkinle of chilli and Himalayan salt or a savoury twist
